Required machinery includes a grinder (wolf), ice maker, cutter, stuffer, and Atmos smoking chambers for drying. Can be produced in natural casings, or a similar product can be made in non-edible plastic casings. Controlled weight loss in natural casings within Atmos smokers is 10%-12%.
